This is a favorite in my family and it’s incredibly easy to make. It would be a perfect holiday snack.
– 2 Medium ripe avocados, peeled and pitted
– 3 tablespoons mayonnaise
– 1 tomato, chopped
– 1 jalapeno pepper, seeded and chopped
– Minced cilantro to taste (I use approximately 1 tsp.)
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
– Corn chips
In a small bowl, mash the avocados and mayonnaise until smooth. Stir in the tomato, jalapeno, cilantro, lemon juice and salt.
Serve with corn chips.
NOTE (/WARNING): When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Also, avoid touching your face.
